Sous Vide Garen ist der Inbegriff von Slow Food und das Sous Vide gegarte T Bone Steak braucht seine Zeit, ist dann aber umso besser. Meiner Ansicht nach ist gerade bei Fleischstücken mit Knochen oder größeren Fleischstücken das Sous Vide Garen angesagt. Der Geschmack der Zutaten bleibt perfekt erhalten und man erzielt mit sparsamem Würzen hervorragende Resultate.
Tipp zum Einkauf von Fleisch:
Ich achte immer auf regionale Herkunft von Fleisch. Dabei ist besonders auf das Tierwohl zu achten. Freilandhaltung und BIO Fütterung sind da wichtige Aspekte. Dank Corona gibt es immer mehr Bäuerliche Direktvermarkter und Online Händler, die hochwertiges, regionales Bio Fleisch anbieten. Esst lieber weniger Fleisch und dafür hochwertig. Fleisch aus dem Supermarkt kann ich an dieser Stelle nicht empfehlen!

Vorbereitungszeit für das Sous Vide T Bone Steak: 2,5 Stunden
Grillzeit: 2 Minuten
Rezept für das Sous Vide T Bone Steak samt Beilagen
Sous Vide braucht seine Zeit, daher sollte man ca. 3 Stunden vor dem Grillen das Fleisch und die Beilagen herrichten. Das T Bone Steak sollte bereits Zimmertemperatur habe. Grundsätzlich arbeitet man immer mit Fleisch, das Raumtemperatur hat, egal was man damit tut.
Das Fleisch pfeffern und salzen und in einen Vakuumbeutel geben. Ein Stück Knoblauch dazu, einen Rosmarinzweig und ein Stück Butter. Dann den Beutel vakuumieren. Kleiner Trick am Rande: Wer kein Vakuumiergeerät hat, nicht traurig sein. Es geht auch ohne! Das Fleisch einfach in einen Zip Lock oder Toppits Beutel geben und die Luft rausdrücken. Dann gut verschließen.
Das T Bone mit 4 CM Dicke kommt dann für 2 Stunden bei 52 Grad ins Wasserbad. Dazu nimmt man am besten einen Sous Vide Stick. Wie es mit der Niedrigtemperatur Methode im Ofen geht, findet ihr hier.
Jetzt kann man in Ruhe das Gemüse vorbereiten. In meinem Fall Broccoli und Karotten. Diese schneidet man in gleich große Stücke und gibt sie in den Vakuumbeutel. Das Gemüse gart bei 85 Grad für 20 Minuten. Ich würde das Gemüse dabei nicht überwürzen. Es entwickelt sehr viel Eigengeschmack beim Garen und kann danach auch noch kurz auf den Grill gelegt werden um Röstaromen zu bekommen. in meinem Fall habe wir den Brokkoli und die Karotten einfach mit Salz, Pfeffer und einem Stück Butter eingeschweisst. Das Gemüse wird schön al dente, ist also noch etwas knackig.
Ist das T Bone Steak gar, kommen die Gemüse ins Wasserbad und man lässt das Steak rasten. 5 Minuten bevor das Gemüse fertig ist kann man das Steak auspacken und auf den Grill legen. Auf jeder Seite 1-2 Minuten genügt, wenn der Grill richtig schön heiß ist. Es ist dann nicht mehr blutig aber eben regelmäßig rosa.
Den Brokkoli. hab ich mit Parmesan und Zitronenabrieb angerichtet, die Karotten Pur. Ganz Minimalistisch aber ein wirklicher Genuss.
